Favorite Healthy Sides

I've been working hard to fix healthy sides with our meals lately 
and thought I'd share a few ideas that I've prepared lately.  I am eager to get some new ideas.  I've been pinning recipes along the lines of green smoothies, roasted cabbage, sweet potatoes and veggie shish kabobs.

Favorite GREEN sides:  

KALE
Kale was on sale last week so I picked up a bunch.
Our favorite way to eat it so far is to saute purple onions, carrots and lots of kale in a bit of olive oil.  Let it cook together and serve warm.

BRUSSEL SPROUTS
We ate some delicious brussel sprouts at a restaurant in Wyoming last year and I wanted to recreate the recipe for us at home.  I sauteed purple onions, bacon bits and olive oil.  Cut brussel sprouts in half and then roasted the whole mixture.  It was tasty!


SALADS
We eat big and small salads.  Small salads with a big meal and big salads with a few smaller sides.  I've found that the key to eating a lot of salads is to have the ingredients for several different salads on hand.  I get sick of eating the same salad day after day so I know I'll eat more salads if I have several options.

I rarely have trouble eating enough fruit,
but veggies are a different story.

  1. I need to get better at my side dishes again. I go in slumps sometimes and right now is one of them - we've had rice the past two rice the past two nights with dinner! Definitely giving the brussel sprouts a try!

  2. Roasted Brussel Sprouts are great! Just cut in half and toss with olive oil and salt and pepper and whatever spice you want and then roast at like 400 for a while til they are turning black in parts. The black parts get crispy and they practically caramelize. I like to do these with potatoes and carrots too and then you have a bunch of sides cooked at once. Sorry I don't know more details like how long, you can google for some recipes I am sure or just try it out.

  3. I found a great, cold green bean salad recipe. I can send it to you, but it's basically a seasoned oil and vinegar dressing tossed over beans.

  4. I love all of your salads on instagram! I want all of them. The kale and brussel sprout recipes we will have to try though - they look so good and I'm always looking for new ways to prepare veggies for Olivia.
