Chicken Orzo Soup

We love chicken noodle soup, but sometimes it feels a bit heavy.  We all have/have had colds lately so I whipped up a batch of Chicken Orzo Soup for the weekend.  It was light, delicious and the perfect comfort food.  Have you ever cooked with orzo before?  I've used the tiny pasta in salads and soups and it's always a hit. 

The recipe is simple and easy.

Ingredients:
4 carrots
4 stalks of celery
1 box of chicken stock
4 t chicken bouillon paste
3 c water
3/4 c orzo
1 can shredded chicken
salt and pepper to taste

Chop carrots and celery.
Drain and shred chicken.
Dump everything (minus the orzo) into a soup pot - veggies, chicken, chicken stock, bouillon and water and heat for an hour or so.  Add in the orzo about 20 minutes before you plan to serve the soup.  Salt and pepper to taste.

The soup reheats well if you add in more water/bouillon paste.
We ate it for several days.

  2. Oh my that looks amazing! Can you tell me what chicken bouillon paste is ( or a sub for it), I've never heard of that ingredient. Thank you!
