Lazy Day Cobbler

I'm sharing a family recipe for Lazy Day Cobbler with you today.
Welcome to the fam.
Thanks to my mom for perfecting this recipe
and making it often when we were little.
My hubby loves it and so do I.

Here's what you'll need to make this really easy, tasty treat.
* I always have these ingredients on hand 
so I can throw together this quick dessert at a moment's notice.

1 stick of butter
1 1/4 c flour (1 c flour and 1/4 c wheat flour)
1/4 t salt
3/4 c milk
1 1/2 t baking soda
1 c sugar
cinnamon
1 can of your favorite pie filling
I always use peach but my mom has also done blackberry
Icing:
1-1 1/2 c confectioner's sugar
1 t vanilla
sprinkle of cinnamon
1 T milk

Preheat oven to 350
Spray 9x13 pan with Pam and put it in the oven to melt stick of butter
 Mix dry ingredients.
 Add milk and a generous sprinkle of cinnamon.
 Stir until well combined.
 By the time you have the dough mixed up,
the oven will be preheated and the butter will be melted.
Pour dough over melted butter.
The butter will peek through.
 Top with peaches and peach goo from the can.
Be sure to evenly spread out peaches.
Sprinkle cinnamon on top.
Pop it in the oven to bake for about 30 minutes.
While it's baking, stir up icing.
You'll need 1 c confectioner's sugar, squirt of vanilla, 1 T milk and a sprinkle of cinnamon.
Stir the first three ingredients together and then add in cinnamon at the end.

Remove cobbler from the oven once it is golden brown.
 Let cool and then drizzle icing over the top.
My husband loves icing so I went a little heavy on it.
 You can eat it immediately or it is great the next day.
I prefer mine al a mode and my husband eats his plain.
Both ways are delish!

  1. Yum! Yes I'm making this this weekend. I use that same recipe except I've never used cinnamon or iced it so I'm excited!
