Blueberry Muffin Pancakes

 We had Brinner one night last week and it was delicious!
and they were so fluffy.
They tasted like blueberry muffin pancakes.

We all loved them so much that they are on the menu TWICE this week.

 I made a few changes to her recipes-
2 cups flour
2 T sugar
1/2 t baking soda
1/2 t salt
2 eggs
1 cup whole milk
1 cup regular sour cream
1 stick melted butter
1 t vanilla
1 c frozen blueberries

Whisk eggs and all wet ingredients.
Fold in dry ingredients and add blueberries last.

 Let the pancakes cook until they are mostly set.
Then flip.  The hotter your pan the better.
It's nice to have a little crispy crust on the pancake.


 I served the pancakes with one scrambled egg. light syrup and THICK bacon.
Yummmmmmm

I made these for a second time
and have TWO improvements:
I chopped the frozen blueberries instead of leaving them whole
and made sure my griddle was HOT!!
We preferred them this way since the blueberry was spread all throughout the pancake.

 Blueberries in every bite!!
 If you ever watch Trisha Yearwood's cooking show, you know that she usually puts a Trisha Twist on her recipes.  I'd like to think she'd approve of my Whitney Twist on this one :)
