Healthy Eats

I'm working hard to make healthy meals these days so I wanted to document my favorites.

Mexican Quinoa Dip
2 cups cooked quinoa
1.5 cups chopped sweet peppers
can of black beans
2 cans shredded chicken seasoned with taco seasoning
1/4 c water
jalapenos
*top with shredded cheese and eat with tortilla chips


Stir Fry - tons of veggies, light sauce & brown rice
I don't love brown rice but Whole Foods carries a frozen brown rice that is really tasty.

Morning Star Black Bean Burgers - 
ah-mazing BBBs found in the frozen food section & I add the fixins

Sweet Potato Hash
Boil sweet potatoes until soft, saute onions, sweet peppers and fry and egg to add into the mix.  Sometimes I will just make egg and sweet potato.  Easy lunch option!

BBQ Ranch Rotisserie Chicken Salad
tons of veggies, rotisserie chicken, bed of greens and make your own dressing
(one part BBQ sauce and 3 parts light ranch was my recipe)

Veggie packed salads

Chicken Brats - we've tried Apple Chicken & Fajita Chicken varieties and they are both delicious!  Sams is our favorite spots to buy them and we eat them on wheat buns or no buns.

Wedge Salads
lots of veggies and light dressing

Powdered sugar dusted strawberries 
is definitely a healthier alternative to strawberry pie or ice cream

PB topped celery -
I realize this is nothing special BUT I hate raw celery so I was proud of myself for eating the crunch stuff.

My husband also found a yummy light ice cream this month.
It was so good - you've got to try it!!
I've always heard great things about Blue Bell ice cream and am now a fan!!
