Harvest Muffins

Have you ever found a recipe and had to make it right that moment!?!?!

It happened to me last week when Kaitlyn (@ourdailybit via instagram) posted a recipe for Harvest Muffins on Instagram.  They looked simple, delicious and I had all of the ingredients in my pantry.  It was meant to be.  I whipped them up in no time and they barely lasted 24 hours at my house.  Everyone loved them.

The recipe makes one batch of mini muffins or 24 mini muffins

Ingredients for the Harvest Muffins
1 3/4 c flour
1 tsp baking soda
2 tsp cinnamon
1/2 t salt
1/2 tsp nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
3/4 c chocolate chips
3/4 c pumpkin puree
1/2 c softened butter
3/4 c sugar

Preheat oven to 350.
Mix dry ingredients together in a bowl
and wet ingredients in another.
Cream together butter and sugar.  Add dry ingredients slowly letting them all mix together.  Beat until well blended.  Add the chocolate chips in last and scoop the muffin mix into a greased mini muffin pan.  I added a few additional chocolate chips on top of my muffins because you can never have too many chocolate chips.
Bake for 15-16 minutes and enjoy!
They won't last long.



We enjoyed several and I shared some with our neighbor.
I think I'm going to have to whip up another batch this week.
