Foil Packet Asian Chicken

ASIAN CHICKEN PACKETS
baby carrots
sugar snap peas
1-1 inch piece of fresh ginger root
3-5 cloves of garlic
Sweet red, orange, & yellow peppers
4 small chicken breasts
Hoisin sauce
Salt & Pepper

Directions:
Buy fresh ginger root and a clove of garlic 
(2 things that I don't usually buy but were easy to work with)
Peel the ginger root and the garlic.  Mince both and combine.
 You'll need several Tablespoons of this yummy sauce.
 Use heavy duty foil or double layers of regular foil for packets.
 Carrots, peppers, then snap peas in the center of the foil.  
Sprinkle ginger/garlic mixture on top.
Salt and pepper to taste.
 Top veggies with chicken.
 Brush LOTS of Hoisin Sauce on the chicken.
 Fold foil over chicken and roll down three times.
Then do the sides, rolling foil in at least three times.
 Bake at 450 for 35 minutes.
Let packets rest for 5 minutes.
They will be juicy so open carefully.

I made this Arborio Rice again for a side.
It did not disappoint. 
This recipe made 5 servings/packets.
 
Plated deliciousness.
 We will be having this meal again.
