Watermelon Salsa

I've never really tried any sweet salsas before - mango or any other fruit.  They always sounded good to me, but I wasn't brave enough to stray from the traditional salsa... until now.  

I made Watermelon Salsa this past weekend for our dinner on the patio and it was amazing!!  It was easy and such a refreshing appetizer.  It's basically perfect for any summer meal.  It was sweet with a little kick and the salty chips were delicious with it.

I started with this recipe and made several changes for my own preferences

You'll need:
 2 cups tiny diced watermelon
1 c tiny diced strawberry
1 cup tiny diced cucumber
1/8 c finely chopped red onion
 1 T jalapeno juice
2 T lime juice
salt and pepper to taste


Mix all ingredients and let sit in the refrigerator for at least an hour so the flavors can blend.  
Serve with your favorite tortilla chips.  I think this salsa would be perfectly paired with your favorite fruity drink or frosty beverage.  You could also add in any berries to sweeten things up a bit.
