Black Bean Burger

I've been on the hunt for healthier recipes this summer and am excited to share a yummy one with you today.  I love Mexican food so this black bean burger recipe sounded perfect!!  I started with this recipe from Allrecipes and made several changes.  I'll list my new and improved recipe below.

 Ingredients:
(makes 8 black bean patties)
 1 can of black beans
2 cups of red/yellow/orange bell peppers
1/3 yellow onion
2 garlic cloves
1 egg
1 T chili powder
1 T cumin
1/2 c your favorite salsa
1/2 c shredded cheddar
1/c c corn
1/2 an avacado
3 T Ortega taco sauce
1 c plain bread crumbs
 salt and pepper to taste

Serve with chopped lettuce, salsa, sour cream & shredded cheddar

I have a 2 cup food chopper so I used that to finely chop all of the ingredients.

 Finely chop peppers, black beans, garlic, onions and spices together.

 It takes a little bit of time to prep all the ingredients so I put Olive in her high chair to watch & learn.  She was happy to chew on kitchen utensils while I cooked.

 I mixed all of my ingredients in the Kitchen Aid to ensure they were well combined.  Keep adding bread crumbs into the mix until it all sticks together to form patties.

 The original recipe called for grilling or baking the patties,
but I opted to cook them on my stove top.
I greased the skillet and browned the patties on each side (20-25 minutes)

 I made all 8 at once and then refrigerated them.  
They were perfect for my lunches all week long.
