Loaded Vegetable Beef Soup

I made the yummiest Loaded Vegetable Beef Soup recipe last week.  It's the perfect way to get in tons of vegetables and have a hearty soup to feed your family.  The ingredient list is totally flexible.  You can customize it to work for you.  It was a great way for me to use up some of our freezer stash from Summer garden vegetables and 4/5 people in my family loved it.  That's a big soup success!

Ingredients:

1 64oz container of V8

1 pkg Hormel Beef Roast Au Jus

(This makes the soup so flavorful and so easy!!  I wouldn't sub it unless you have to!)

1 pkg frozen mixed veggies (corn, green beans, peas & carrots)

1 red potato diced small

1 sweet potato peeled & diced small

1/2 yellow onion diced small

1 green onion chopped

1 carrot chopped

sweet corn

tomatoes diced

okra sliced

Worcestershire sauce

Your favorite seasoning salt - I used Everyday Seasoning Salt

 

Directions:

Chop all of the veggies into small pieces.  Put veggies and V8 in the crockpot.  Heat the Beef Roast in the microwave.  Remove all fat.  Add Beef and au jus sauce into the soup.  Add seasoning and stir well.  Combine all ingredients in your crock pot and let cook 6 hours.  Serve.

This soup is delicious with crackers, grilled cheese or homemade bread.  It gets better each time you eat it as do most soups.  It reheats perfectly or freezers if you end up with lots of leftovers.



I loved using up sweet corn from Summer that we had in the freezer along with okra that we picked.  They made the soup extra delicious.  But I know you could grab all of these things from the store or your local farmer and end up with the same yummy soup at your house.
