Going Bananas

We are big fans of bananas at our house.  They delicious, an easy snack and we have so many good recipes that call for ripe bananas.  We always have bananas sitting on our counter or sliced in our freezer and I buy them in bulk at Sams.  I have tried a couple new banana recipes recently and am excited to share them with you today.  Like all of my recipes, these are simple and delicious.


Banana Cake with Caramel Frosting


This recipe comes from The Cake Doctor cookbook, but I've made a few changes over the years.  I originally posted the recipe back in 2012 and have a few updates to share.  It's still an amazing cake and no one will ever believe the bulk of the recipe is a boxed cake mix.  It tastes homemade and is a crowd pleaser at any gathering I've ever taken it to.


Ingredients:

1 box of yellow cake mix
1/2 c brown sugar
1 t cinnamon
3-4 ripe bananas
3 eggs
1/4 c canola oil
1 c water

Caramel Frosting Ingredients:
1 c chopped pecans
half a stick of butter
1 c brown sugar
1 t vanilla
1/4 c milk
4-5 c confectioners sugar

Cake directions: Blend all ingredients until smooth.  Pour in a 9x13 pan and bake at 350 until browned and the center is set.  Approx 30-35 minutes.

Frosting directions:  Heat the butter and brown sugar on the stove until it boils for 2 minutes.  Add the milk, stir and bring back to a boil.  Remove from heat and add in confectioners sugar and vanilla.  Stir until smooth, pour over the cooled banana cake and top with pecans immediately.    

Recipe Yields: 9 x 13 cake and is delicious warm or the next day.


Banana Pops

I love having a sweet treat in the evenings, but have been trying to cut back on desserts.  These banana pops are so yummy and the main ingredient is bananas.  I love this little 4 count popsicle maker and have made at least 4 batches of these banana pops.


You'll need:
3 frozen, sliced bananas
3 T your favorite peanut butter
2 T chocolate chips
1/4 c water

Recipe yields: 4 large popsicles and they're good for at least a week if they last that long!

Put everything but the chocolate chips in the blender and blend until smooth.  Add the chips in last and blend them up nicely.  Poor the mixture into the popsicle molds.  Fill the sections up completely and freeze for several hours.  You may have to run the container under warm water to get the popsicle to come out.  It's easy and worth it.  I eat them one at a time and you can just run water over the one you want to eat that day.  They're delicious and super easy!  They aren't overly banana tasting - the peanut butter comes through and the chocolate chips are a fun addition.

  1. I just made some banana muffins for my kids to have as a snack yesterday! I love a really ripe banana on top of a rice cake with peanut butter for an afternoon snack. I'm definitely going to check out your recipe for banana bread pancakes… Those sound so yummy!!

  2. I think I only like bananas when they're in a baked good (or a smoothie), so that cake with caramel frosting looks amazing! Homemade frosting really is the best.

  5. Oh my gosh that Banana cake looks amazing! At first I thought it was walnuts on top, and I really dislike walnuts, so I was pleasantly surprised to hear that it's pecans!! I'm definitely going to make this!! Thanks for sharing =)

  9. Paul loves banana bread, so I always keep a few ripe bananas in the freezer in case he gets a craving for it. I've never tried anything like your banana pops...but those do look like amazing dessert alternatives! Pinning that one for sure.

  10. I love banana flavor but for some reason bananas hurt my stomach. Whenever I eat one it makes my stomach crap up. Give me all the banana laffy taffys and banana popsicles.
