Favorite March Dinners

We've eaten out more than usual this month with traveling and having out of town guests.  I always look forward to returning to our regular cooking/grocery shopping routines.  We've been trying to eat healthier meals, more salads and exercise more.  So far, so good with those goals.  I think the Spring weather has really helped us to get out and about more.  I wanted to share some of the best dinners we've had this month with you.

The Nacho Bar
was clearly the favorite dinner of the month.
We had great nachos for lunch when we were in Oxford, MS and I just had to try to recreate them at home.  They were delicious and everyone loved them!!
Our nacho bar included: grilled chicken, salsa, chips, chopped lettuce, black olives, chopped sweet peppers, shredded sharp cheddar, jalapenos, cherry tomatoes, black beans, refried beans, spanish rice and sour cream.

LOTS of salads
we've found that variety and always having fresh produce in the fridge is key 
to making sure you eat colorful meals.
