Lettuce Wraps


We have been eating a lot of lettuce wraps lately.
They are so easy to throw together for a quick meal.
I think we've had them three times in the last week... whoops :)

Ingredients:
 3/4 c chicken - shredded
1 T olive oil
1/2 c broccoli slaw
1/4 c chopped green onions
a few small sweet peppers
soy sauce
hoisin sauce or BBQ
head of lettuce
1 pouch quinoa/grain blend from Sams without the Thai peanut sauce 

Directions:
Combine all ingredients together except quinoa blend and cook for about 15 minutes on medium heat.  Boil the quinoa blend separately and add the cooked grains in with the chicken/veggie mixture.  Let it cook a few more minutes.  
Serve on lettuce wraps.  Drizzle hoisin or soy sauce on your wraps.

The lettuce wrap mixture is delicious left over, too.
