Blender Muffins

I mentioned last weekend on Instagram that I was trying a new recipe for blender muffins.  They sounded tasty, I had all of the ingredients and there was no flour or granulated sugar in them.  Win-win-win :)

and I made some changes to improve them!

My recipe:
3 ripe bananas
3/4 c your favorite peanut butter
2 eggs
1 t baking soda
1 t vanilla
sprinkle of salt
1 generous squeeze of honey
1/2 c chocolate chips

Put everything in the blender except for the chocolate chips and blend until smooth.

Scoop into mini muffin tins and bake at 350 for 8-10 minutes.

 I saved a few chocolate chips to add on top of the muffins.

 My baking assistant was very helpful this morning.  She loves kitchen utensils and bowls so I usually make her a little station to do some cooking of her own.





 These were best fresh out of the oven and got a little chewy leftover.
Olive and I both loved them and they are much healthier than our usual muffin recipes.

  2. These look so simple! Yum! I've microwaved eggs before for Elizabeth. They turn out great! Just a little more eggy smelling then just cooking them on the stove.

  3. I love Kelley's series on foods to feed toddlers. It literally changed my life. We now have microwave eggs frequently. It is so much easier to cook one little egg in a microwave.

    Totally off topic...I got an email about an online sewing class (http://shop.abeautifulmess.com/shop/classes/sew-with-us). It sounds fun but never tried one. Thought I'd pass on the link in case you haven't came across any online stuff yet. I want you to start sewing because I know you'll make the cutest stuff and I want to see! :)

  6. Awee you are so sweet!! I can't believe I'm just seeing this a week later. (It's been a crazy week though!) I love this muffin idea! We've been doing a bit of paleo desserts to eat less sugar - and Olivia's been liking them, so I know she will love these! I think I'm going to make them for Easter morning.
