Banana Zucchini Chocolate Chip Mini Muffins

I promised on Friday to share the recipe for
Banana Zucchini Chocolate Chip Muffins so here it is.

I shredded my zucchini extra fine so my muffins had a bit of a green tint to them.  They tasted delicious so I didn't mind the green.  They tasted like moist banana muffins.

I found this bread recipe on Oh, Sweet Basil
and made a few changes to make MINI muffins.

Ingredients:
1 1/2 c flour
1 t baking soda
1/2 t baking powder
1 t cream of tartar
1/2 t salt
1/4 c canola oil
2/3 c sugar
1 egg
3 ripe bananas
1 c finely grated zucchini
1 c chocolate chips

Directions:
Combine most of the dry ingredients in a bowl.
In a separate bowl combine the sugar, oil and egg.  Add in the banana and zucchini and mix well.  Then add the flour mixture in a little at a time until everything is combined.  Fold in the chocolate chips last.  Grease your mini muffin tin.  Recipe makes about 30 mini muffins.

Bake at 350 for 15 - 17 minutes or until lightly browned.

They were best right out of the oven so I'd recommend eating them right away.

  1. Those do look really yummy! I love how you involve Olive in your baking. My mom did that for me, and while I'm sure it doesn't speed up your process at all, it will help her gain confidence in the kitchen at an early age! She's so cute with her spatula.
