May Quick Family Favorite Recipes

I did a lot more cooking this month than the past few months.  Hooray!  I'm excited to share some easy dinner ideas with you that are all family favorites at my house.  I don't have hours to spend on meals (who does??) so here are some quick recipes that are crowd pleasers.  I tried hard to make colorful, quick and easy meals.  Here are the best meals of the month.

AVOCADOS
I picked up a bag of avocados at Sams and enjoyed several yummy meals with them.

Avocado Hash makes the perfect breakfast or lunch.
I add turkey sausage, chopped onion, avocado, sharp cheddar and one fried egg.
It keeps me full and is super easy to throw together.
Avocado taco salad - I added sweet peppers and taco seasoning to ground beef.  Loaded up the salsa, veggies and cheese and just had a few chips on the side.

Pepperoni Pizza Pinwheels
A family favorite recipe that we eat regularly and dip in marinara sauce.

I tried a new salsa recipe:
Fresh Avocado Salsa
It's delicious with chips, served as a side with tacos or eaten on top of a salad.


Favorite Desserts of the month:
Butterfinger Blizzards
vanilla bean ice cream
splash of milk
chopped butterfingers
Strawberries & cool whip

  1. Avocado recipes speak to my heart - love avocados! That fresh avocado salsa looks perfect for our Saturday night movie evenings. I could probably just eat it by the spoon :)

  4. YUM. I said the same thing on Katie's post, but I could eat at your house every night and I'd be a happy camper! :) I need to make those pizza pinwheels again - the last time I made them, they were a hit with Paul.

  7. I've added the pinwheels to next month's menu. I try to do 2 things a week that are brand new. Thanks to you and the other ladies, I'm getting awesome ideas to make dinner fun again.
