Perfect Summer Treat

Looking for the perfect summery treat?
Homemade Ice Cream Cookie Sandwiches
 Make your favorite cookies (mine are chocolate chip)
Add your favorite ice cream in the middle (mine is 1/2 fat vanilla bean)
voila!
 Suggestions:
Make your cookies a little smaller than usual 
because regular sized cookies make BIG cookie sandwiches!
Add chocolate syrup or caramel syrup
Roll the edges in sprinkles, mini chocolate chips or your favorite chopped candy bars.  
Make them in advance for a gathering and let them harden in the freezer.
Turn this into a cookie sandwich buffet and let everyone make their own.

    Wow... looks amazing!! I've never even thought of this!! What a great idea! I think I'm gonna have to make one of these for my cheat meal dessert on Saturday!!
