I rarely take part in Cinco de Mayo festivities, but I got sucked into all the hype this year. I found myself heading to the grocery store picking up all the ingredients for a little Mexican fiesta at home. I had been wanting to try Katie's Recipe for Baked Chicken Tacos for months and I decided it was the perfect time to give it a try.
They were delicious!!
I made a few changes to the original recipe
so here's my version of Baked Chicken Tacos
1 rotisserie chicken shredded
1 package hard shell tacos
pepper jack cheese
sharp cheddar cheese
1 can black beans
1 small jar of your favorite salsa
3 T taco seasoning
lettuce, tomatoes, black olives & jalapenoes
Shred the chicken and heat it with taco seasoning. Add salsa and let the mixture simmer for 15 minutes so the salsa can soak into the meat. Fill each shell with a generous scoop of chicken, spoonful of black beans and pepper jack cheese.
Bake at 400 for 10-15 minutes.
Top with shredded cheddar cheese.
Serve with all the yummy toppings.

Mexican food is our favorite too - hands down! Even Caleb will clear his plate when we eat Mexican, so it's def our family favorite!
