Homemade Ice Cream Cookie Sandwiches

I love to make chocolate chip cookies
(as seen previously)
which makes it really easy to make
homemade ice cream cookie sandwiches.

 Select 2 evenly matched cookies
 Bottoms up
 Any ice cream of your choosing
My favorite is 1/2 fat vanilla bean - tastes great!
 A scoop or two of ice cream in the middle
Stick in the freezer to harden or eat right away!
You can also roll the sides in sprinkles,
nuts or mini chocolate chips.
