Chunky Monkey Bars

Prepare yourself for the BEST recipe for over ripe bananas!!

Every week I have this "problem" of what to do with the bananas that have turned brown.  

I slice them and freeze them for smoothies, make muffins and bread and occasionally toss them if I don't get to them in time.  I have pinned recipes to try and I think it's safe to say I have found the most delicious recipe to share with you today.  My whole family wolfed it down and I've made it TWICE in the past few weeks.  It's so easy and so yummy!  Better than muffins and bread - I promise!!


Chunky Monkey Bars

1/2 c butter softened
2/3 c brown sugar
1/2 c sour cream
1 t vanilla extract
1 egg
1 1/4 cup flour
1 t baking soda
1/4 t salt
3 small ripe bananas mashed
1 cup chocolate chips

Bake at 350 for 35-40 minutes or until a toothpick comes out clean.  The top will get fairly brown, but keep an eye on the middle of the pan to ensure it's fully baked.

Beat butter, sugar together first and then add in sour cream.  Add in the vanilla and egg and beat again.  Put in the dry ingredients next, then the bananas and chocolate chips last.  You could add in nuts too or add nuts instead of chocolate chips if you'd prefer that combination.

Pour the batter into a greased 8x8 or 9x9 pan.  Bake and let cool before slicing.  These bars are delicious for a few days, but I doubt they'll last that long at your house.

  3. YUM! (Beautiful food styling for your pictures, btw!) I have the opposite ripe banana problem. I buy already ripe ones so they can get nice and brown by the end of the week when I want to bake with them. But Paul likes his bananas super ripe...so I'll come home from work on Friday and find that he's eaten all my black bananas! I'll have to hide some for this recipe - it looks delish! :)

  6. I have a handful going bad as I type this and this would be a killer way to use them and get a tasty treat. Maybe I'll do it this weekend when they are super ripe!
