Do you love a breakfast casserole as much as I do?
My table at Mom's Group was in charge of doing the breakfast buffet in October. We all look forward to enjoying a hot breakfast together so this was a fun job. I opted to make 2 egg casseroles and a baked oatmeal casserole. They were all so good and so easy! They also were really easy to make the night before, warm up in the morning and travel with them to church. No mess! Just yummy food.

I baked all of mine in disposable pans because I had to carry in the food + Bible study supplies + Leo + his supplies. I knew my glass pans and lids would be heavy. It worked out great to use these pans.
I had a hard time finding shredded hash browns for my casseroles so I had to improvise. The day before I made the casseroles, I washed diced up some red potatoes and onions into very small squares. I roasted them at 400 for 20 minutes with olive oil and my favorite seasoning salt. Then let them cool in the fridge. They added so much flavor to the casseroles. I'd definitely do this again.
The following day I built my casseroles. Here's a quick list of ingredients for each:
#1 Ham & Cheese egg casserole 9x13 pan
1 1/2 c ham
1 1/2 c roasted potatoes
lots of shredded sharp cheddar
12 eggs
2 T milk
salt and pepper to taste
#2 Turkey Sausage, onions & sweet peppers 9x13 pan
1 1/2 c Fully cooked sausage crumbles
1 1/2 c roasted potatoes
1/2 c roasted onions
1/2 c diced sweet peppers
lots of shredded sharp cheddar
12 eggs
2 T milk
salt and pepper to taste
#3 Berry Baked Oatmeal 9x9 pan
2 ripe bananas
1 1/2 c quick cook oatmeal
1/2 c berries
2 T cinnamon
We love this fulled cooked Jimmy Dean turkey sausage crumbles. I used about half a bag. Then I diced up some fully cooked brown sugar ham for the other casserole. Probably about 1 1/2 cups of meat in each casserole.
Layer the potatoes in a greased pan. 1 1/2 cups of potatoes per casserole. Add in the meat.
Sprinkle the veggies on top of the sausage. I roasted the onions and then just diced the raw sweet peppers very small.
12 eggs + milk scrambled together for each casserole. Sprinkle a little cheese on the top of each casserole and then pour on the egg mixture.
The eggs should cover all the meat/veggies/cheese/potatoes.
Then add on another layer of cheese and salt/pepper to taste. I used extra sharp cheddar cheese.
Bake at 350 until golden brown. If you're going to reheat them the following day, only brown them a little. They will brown even more during the reheating process. Mine baked for 25 minutes or so. I took them straight from the fridge to the oven to reheat them. You can set your oven on warm and let the casseroles warm fora bout 30 minutes. Or set it for 350, cover your casseroles with foil and let them warm up for about 20-25 minutes. Both options worked great for me!
Baked oatmeal time. I used 2 ripe bananas, 1 1/2 c quick cook oatmeal, generous amounts of cinnamon and mixed berries. Mix all together and then bake at 350 for 20 minutes or so until set. This recipe made a 9x9 pan. It was really yummy.
Each lady at my table brought in items to build our buffet. They were all so good!
I precut my egg casseroles into squares so that they would be easy to serve. They were great! I think I might add 14 or 15 eggs next time so they're a little fluffier instead of the 12 I did this time, but otherwise they were delicious. I had a few pieces leftover and enjoyed them so much reheated.
I think I'm going to whip up another egg casserole soon for easy lunches for myself all week!
How long did you bake them for the next day to warm up? And did you put them straight from the fridge into the oven, or let them come to room temp first? (I'm never quite sure how long to reheat a whole pan of make ahead casserole before a party!)
