Super Simple Pound Cake

Hey Friends!  I hope you had a very happy 4th of July weekend.  I'm working on a weekend recap for you.  I couldn't wait to share this super simple pound cake recipe with you.  I made it for my family and it didn't last long.  It was so easy and so yummy.  Even the kids agreed.

I searched Pinterest for recipes, found some and made a few changes to work with what I had.  I love this recipe because you make it in a loaf pan!  It comes together so quickly and, if you're like me, these are ingredients that you always have on hand.  And no greasing and flouring of special pans!  Yay!  Just grab your favorite loaf pan and go.  This feels like a really easy Summer dessert option if you end up with some last minute plans or if you want an easy homemade dessert to share with friends.

Super Simple Pound Cake

Ingredients:

1 stick margarine/butter room temp

3 eggs

1/2 c sour cream

1 1/2 c King Arthur flour

1/4 t baking powder

1/4 t baking soda

1 c sugar + 2 T to sprinkle on top before baking

1 t vanilla

Toppings:

Whipped cream + Berries

Directions:

Bake at 325 for 60 minutes or until golden brown + a toothpick comes out clean.

Combine butter and sugar.  Add in everything else and mix until well combined in a mixer.  Pour into a greased loaf pan.  Bake until perfectly browned on top and make sure a toothpick comes out of the center clean.  Let cool.  Serve with berries and whipped cream.

Look at this amazing crunchy, sugary top!

I prepped all the berries and left them on the counter to dry.  Then I hear very loud NUMMY NUMMY comments coming from the kitchen.  Leo helped himself!

Summer dessert perfection!!

You better believe this pound cake will be on repeat at my house.  I hope you give this a try ASAP!
