Sweet Potato Cinnamon Bread

My husband will come home from time to time with a new recipe for me to make.  He'll print off the recipe and stop at the store to get the ingredients we need.  He likes to surprise me and I like making things that he is excited about.

He came up with this recipe for Sweet Potato Cinnamon Bread and I have to confess...

I was not excited about it.

I love breads.  I love Fall baking.  But, this just didn't sound great.

I decided I would just put on a smile and make it anyways.

He was so excited and I was happy to do it for him.

We baked it together after the kids went to bed and it was really easy.

And to my surprise, IT WAS DELICIOUS!!

It made the prettiest load of bread that would be perfect for any Thanksgiving gathering this month.  I will definitely be adding this recipe to my recipe box of favorites.


Sweet Potato Cinnamon Bread (original recipe from Taste of Home)

Here's my version of the recipe:

1 3/4  c flour
1 1/3 c sugar
1 t baking soda
1/2 t salt
1/4 t baking powder
1 1/2 t cinnamon
2 eggs
1 c mashed sweet potatoes from a can
1/3 c canola oil
1/3 c whole milk
1/2 coarsely chopped walnuts

Combine wet ingredients and dry ingredients separately.  Stir them together.  Pour into a greased large loaf pan.  Sprinkle the chopped walnuts on top.

Bake at 350 for 35-45 minutes until a toothpick comes out of the center clean.  Cool in the pan for 15 minutes and then remove.  Slices beautifully!



You can even add a sprinkle of powdered sugar for a little extra sweetness.

  1. I love that Kevin does that! So sweet and such a fun at home date! Do you think I could sub out the sweet potatoes for one cup of pumpkin?
