Pumpkin Coffee Cake

I'm sure most of you have PUMPKIN on the brain now that October is finally here.  Even if you don't eat pumpkin, I'm guessing you decorate with pumpkins or drink something pumpkin.  I have a really delicious recipe for you today.  Pumpkin Coffee Cake!  I needed to come up with a dessert QUICK one evening and I just grabbed things from my pantry.  Voila to this yummy dessert.

It was really easy to put together and it smells amazing.  My whole family loved it!  It's a really pretty cake and would travel well if you need a dessert to bring to a gathering this Fall.


Pumpkin Coffee Cake

Cake:
1 box yellow cake mix
3 eggs
1/2 c water
1/2 c oil
1 T brown sugar
1 T cinnamon
1 c pumpkin puree

Topping:
1 T Cinnamon
1 T sugar
4 T cold butter
1/2 c brown sugar
1 T flour
1/4 c chopped pecans

Icing:
1 c powdered sugar
sprinkle of cinnamon
1 t milk
1/4 t vanilla

Combine all dry ingredients.  Add in wet ingredient and mix until smooth.

Combine all topping ingredients.  Preheat oven to 350.  Pour batter into a greased 9x13 pan.  Sprinkle all toppings on top of cake.  Bake 25-28 minutes or until the middle of the cake is set.  Let cake cool for 15 minutes and then drizzle the icing on top. 

This cake is delicious warm or the next day. 

Straight out of the oven:

Diagonal drizzle of icing once the cake had cooled a bit.
