June Recipe Round Up

I'm excited to share my favorite recipes from this month with you.  We've been working hard to eat colorful meals, eat real food and to enjoy healthier options.  I would say we did a pretty good job all month long.  

Here are our favorite recipes:

GRILLED Salad
I first saw this recipe on April from A. Liz Adventures blog and couldn't wait to try it out.  I love salads, but had never had a hot salad.  It was amazing and so easy.

Wash one heart of romaine (serves 2 people)  Cut it in half and drizzle with olive oil.  Then sprinkle on your favorite seasoning.  I went with Montreal Steak Seasoning because we love it.  I sprinkled with a heavy hand and should have gone lighter.  The lettuce didn't really need a ton of seasoning just a light sprinkle.
 Grill cut side down for about 5 minutes.
 Serve!  Kevin and I both loved this easy side.  I prepped it and he grilled it.

SOFT TACOS
I love assembling tacos, baking them and then just adding the cold ingredients.  There's something delicious about melty cheese and all the flavors melting together.
You'll need:
soft shells, shredded cheese, shredded chicken, cooked onions and peppers, jalapenos
assemble and bake until the cheese is bubbly.
Serve with lettuce, tomatoes & salsa.

SALADS
I eat a BIG salad every day for lunch and usually make the same salad two days in a row and then come up with a new one.  I have found that if I eat the same salad every day then I get bored and quit eating them.  So I've got my fridge stocked with a variety of veggies, variety of dressings and am ready to go for the week.

These were some of my favorite salads from the month.
Honey Mustard is my favorite dressing.
I love hard boiled eggs, snap peas, sharp cheddar cheese, noodles and grilled chicken.





 Favorite TREATS from the month:
Peach Cobbler topped with Vanilla Bean Ice Cream is always a hit.
My recipe is super easy.

Butterfinger Cookies
were loved by all and didn't last long at my house.
Good thing I gave the majority of them away.

  2. Grilled salad.... I am just so unsure about warm lettuce. But if you say it's good, I trust you. I also love the idea of assembling the tacos and baking them. I never do that and it always takes so long for everyone to fix them at the table. I'll try that soon too!

  5. I'm making a peach cobbler tonight using fresh peaches straight from our tree. Your salads always look so amazing. I've never heard of a hot salad but I'm now excited to try. I think I want to make those soft tacos with my honey bbq chicken recipe that I make using the crockpot. Thanks as always for sharing your amazing recipes. They are always an inspiration.

  6. Good job on eating healthy! It's hard to do...I haven't conquered that goal in a long time. :) My parents took us to lunch at a fancy bistro at Biltmore, and I ordered the grilled romaine salad. Theirs was garnished with some pickled onions, and it gave the salad such an awesome zip! If you're into pickled veggies, give it a try. :)

  7. Baking tacos!! Genius! I need to try that. And we need to get a cobbler or two in our bellies this summer. It's one of my favorite desserts (any fruit dessert, really) but we haven't had any yet so far. I haven't heard of a hot salad either, but yours really looks yummy!

  8. Yum!!!! We are a fan of baked tacos over here too! Especially of the crunchy variety- they don't break when you eat them if you bake them first! I'm definitely going to give some of these recipes a try. Thanks so much for sharing.
