Highlights of the Week

Happy Friday Friends!!
Hope you have had a good week and are looking forward to the weekend.
The best parts of my week were...

1. Heading to Indiana for the long weekend and seeing lots of family and friends.
My sister + my Mom + me being sneaky together
2. I got to help plan and then attend my dad's SURPRISE retirement party last weekend.  It was one of the best surprises I've helped pull off in a long time.  Retirement for my dad = kicking off his next campaign for Sheriff of Spencer County, Indiana!!

3. I tried several new recipes that are keepers this week.

4. Olive is on the move!  She's dying to crawl and it's amazing how much better she's getting at moving each day.  Oh and she might have figured out how to give a thumbs up too :)

5.  I definitely won the grandparent lottery when I married Kevin.  He's got 4 of the greatest grandparents!!  We got to have lunch with all of them right before we left town and it was so nice.  They doted on Olive and on us.  They asked us tons of questions, wanted to hear an update on our lives and passed Olive around.  Grandma + Nana were thinking alike because they both showed up with our favorite cookies and a toy for Olive to keep us entertained on our 7 hour drive back to Arkansas!  We sure are lucky to have them.   
My Finish this statements of the week...
I plan on buying...
a good pair of tweezers in the near future because mine are shot.

I give LOFT five stars because...
 their clothes are stylish, high quality and I love shopping their sales.

I felt courageous when...
I survived getting the WORST haircut of my life.

I feel about swimsuit shopping like I do...
about going to the dentist.  A necessary evil :)  Actually I love finding a great suit and wear it for several seasons and I know I need to go to the dentist but I always dread it due to my "soft teeth" that always seem to need some type of money thrown at them.

Hot Springs 1983

 Well it turns out that my visit to Hot Springs last month was not my first time there.  My mom reminded me that I actually went there with my parents when I was almost 2.
Proof in the great mustache and oversized sunnies :)
 Oh and I guess my parents did a good job of teaching me to love road trips from a very young age... haha.  Not sure which is funnier: 
the portable potty training baby or that lovely red car interior!!
 I never imagined that I'd be living in Arkansas 
so it's funny that these photos were a little glimpse into my future.

Needy Boys

 We traveled to Indiana for the three day weekend and we left the boys at home.  They had plenty of food & water.  I left out their favorite toys & blankets to lay on and also hid their favorite kitty treats throughout the house (in their favorite spots) but both were extra needy when we returned.  
Guess there's no substitute for my love :)

Local Restaurant Scene

 We are enjoying trying new restaurants in Little Rock.
Here are our latest spots:

Taj Mahal Indian Cuisine
Free Appetizers of Lentil Chips & dips
*a new food that was pretty tasty
mozzarella stuffed naan was ah-mazing!!

 I ordered Chicken Vindaloo and Kevin ordered something Chicken that he request 8 out of 10 on the hot-o-meter.  I requested mine to be very mild and it was HOT HOT HOT.  I ate a small portion drowned in jasmine rice and had 5-6 cups of ice water.  WAYYYYYY too hot for this girl.
 We'll go back, the staff was VERY nice and 
I'll get something much more bland and maybe order two mozzarella naans.

 Kung Pao Chicken for Kevin -
good but not spicy enough for his liking.
 We've already given it another try and made a few modifications to our order.
Everything was perfect!!
The restaurant is darling - maybe Olive will be up for a dinner date and we can dine in next time.

 Delicious, well done burger and fresh cut fries.
Their drinks & fries have unlimited refills.
So yummy!

 A pizza & salad buffet
We went on a Friday night and there was tons of pizza.  They walk around to your tables and offer piping hot pizza to you.  If you want something else, you head up to the buffet.  Their pepperoni was really good and we both LOVED their BBQ chicken pizza.  They had several dessert pizzas and the staff was really nice.  Olive enjoyed people watching :)  The pizza isn't anything fancy but it was a fun, inexpensive date night.

 We are already working on a list of other new restaurants to try.

Super Thick Lash

I've been using this mascara for several years.
It's under $5 a tube and you can buy it just about anywhere.
I layer it and be sure to let each layer dry for a few minutes before applying the next.
It lasts all day and is easy to remove at the end of the day.


Chicken Stir Fry Cous Cous

I made up the most delicious dinner this week and I had to share it with you!!!
It's really easy to throw together and it left us licking our plates.

Ingredients:
one chicken breast per person
Worcestershire sauce
1/2 an onion
4 stalks of celery
large handful of matchstick carrots
green onions
1 box of cous cous
olive oil

Directions:
 Put olive oil and cous cous in a skillet and lightly brown for about 5 minutes.
Stir often to coat the cous cous and to brown evenly.
Start boiling 2 cups of water while the cous cous browns.
 Once browned add to boiling water and let cook for about 10 minutes.
Drain and serve.
I LOVE the texture of cous cous and I think it so much better than rice.

Chop your veggies into bite sized pieces.
 Put them in a skillet with olive oil and saute. 

Cut chicken VERY thin and pour Worcestershire sauce on top.
Turn after a few minutes to ensure even cooking.

 Combine cooked chicken with the cooked veggies.
 Top with chopped green onions.

 Plate and serve!!
 My husband asked if we could have this every week.
It really was delicious!!
