Rainbow Charcuterie Board

We had a fun rainbow themed dinner this week.  It was really easy and would be perfect to serve your family or friends for St Patrick's Day next week!

I ended up using 22 different things on our board.  Most are pantry staples for us and some were extra fun for the holiday - mini marshmallows, jelly beans, veggie straws and Cheetos.  You could easily add in some Lucky Charms.  I meant to and forgot.


The board breakdown:
4 meats - prosciutto, turkey pepperoni, turkey sausage and dry salami
3 cheeses - sharp white cheddar, sharp cheddar and sliced cheddar.
lots of fruits and veggies
spicy mustard
olives and pickles
lots of salty cracker options - Aldi Pita crackers, Wheat Thins, Gardettos, Pretzel Thins, Veggie Steraws, Cheetos

I love doing these boards for dinner!  No mess cooking and easy clean up.  My whole family enjoys them as long as I have a good variety and plenty of meat.


We ate dinner on our rainbow plates, rainbow glitter silverware, clover napkins and clover food picks.  Everyone loved it!

We had enough supplies to have this dinner 3 different times. 

The last time we had it on the menu, Fletcher wasn't feeling great.  I opted to do individual charcuterie board plates personalized for each person so we didn't share any germs.  We did all the meats, cheeses, fruits and veggies on plates and then the adults passed out the salty crackers.  It worked great and was just as yummy as a doing a big board.  This would be a fun option for this type of meal in the coming weeks as the germs seem to be ever present.
