Bunny Pancakes

Here's an easy way to make an Easter breakfast for yourself or for your family.

Bunny Pancakes!

 I love Bisquick pancakes and always use the pancake recipe on the side of the box.

I add a Tablespoon or two of flour to the recipe to make them extra fluffy.

Here are the tools you'll need:

Do the head first and then quickly add on each year.

 Let cook for several minutes and then carefully flip.

 I decided that my Easter bunnies needed some speckled eggs.

So I added mini chocolate chips to the remaining batter.

 Eggs!!

 My ultra thin spatula worked perfectly for this job.

 Ta Da!!

 These fluffy pancakes will be a crowd pleaser for sure!

Bunny Pie

Looking for an easy way to make a festive treat??

Add bunnies to your pie.

 I made a family favorite strawberry pie this week and decided to add some bunnies.

 I made a homemade crust and cut out mini bunnies out of the extra.

Then I added them around the edge of the crust with a dab of water.

Baked and added in the berries.

 Such cute, yummy bunnies.

Everything tastes better when it is festive.

What Whitney Wore

We have had weather in the sunny 60s, rain and snow in Utah this week.  My wardrobe has gotten brighter, included animal prints and I've been wearing LOTS of layers.  I'm hot one minute and freezing the next... hello 30th week of pregnancy.  PS Apparently, this week could alternatively be titled The Week of the Ponytail.

Mom's Bran Muffins

I've been craving Bran Muffins for a while so I finally got around to making them.

My recipe is based on my mom's original recipe with just a few changes.

Here's what you'll need:

 16oz box of Bran Flakes (I always use Great Value brand)

2 1/2 c sugar

5 c flour (1 c wheat flour and 4 c white flour)

5 t baking soda

2 t salt

4 T Crisco oil

4 eggs

1 quart buttermilk

Mix all ingredients together.  Make sure you have a GIANT bowl and sturdy spatula ready for this large mixture.  Stir really well so that everything gets mixed nicely.  

The refrigerated batter keeps for up to 6 weeks.

Bake at 350 for 20-25 minutes 

or 12-15 if they are mini muffins.

They are great right out of the oven with a little butter.

FAMILY at my Shower

I mentioned earlier today that I enjoyed getting to see so many aunts, cousins, grandmas and close family friends at my shower.  It was really exciting to celebrate baby Olive with all of them.  Kevin didn't come to the entire shower, he golfed that morning and then came in at the end.  We decided that showers weren't really for guys and were both fine with this.

Both of Kevin's grandma's crocheted some amazing things for Olive:

a small pink blanket, a patterned pink blanket and 3 pairs of booties!

Such sweet Great Grandma's already :)

 People were so generous and I really enjoyed being showered with gifts :)

Olive will be ready to cheer on the Irish with her dad :)
