If you're from the Midwest, sweet corn is a staple right now. We've been lucky to have neighbors share tomatoes, cucumbers and we've purchased corn several places.
If you're not in the Midwest, I sure hope you an find some yummy corn to enjoy late in the Summer. We have been stocking up each week at the grocery store so we can enjoy it as the perfect Summer side.
I have one new recipe to share with you today for CORN SALAD.
It's the perfect Summer side. You can make it in advance, it's light and fresh and it's SO GOOD.
Ingredients:
Fresh corn cut off the cob
Diced purple onion
Chopped grape tomatoes
Chopped cucumbers
*Optional: Diced Avocado or sweet peppers
Lemon
Olive oil
Salt & Pepper
Directions:
You decide the proportions of each ingredient based on your taste. Chop everything up, stir until well combined, refrigerate and serve. It goes great with anything you grill, chicken or just eat it plain.
