Pancake Mini Muffins

My family loves muffins and pancakes so I knew we had to give these Pancake Mini Muffins a try!  I first heard about them from my friend Justine and I couldn't wait to give them a try.  I love eating pancakes, but I don't love standing in the kitchen flipping pancakes.  This breakfast recipe is quick, yummy and I bet your family will love it!


 Mini Muffin Ingredients:
Your favorite pancake mix (Aunt Jemima mix + water) 

Toppings:
cinnamon sugar
chocolate chips
pecans
peanut butter
sprinkles
bacon
mini m&ms
jelly
honey
berries

After they've baked: dip the mini muffins in butter & syrup

Prepare the mix as directed, let the mix sit for at least 5 minutes to give it time to puff up a bit and then fill the muffin cups.
I used two cups of dry pancake mix + 1.5 cups of water for 24 mini muffins.

Make the muffin cups really full.

Little hands can be super helpful during the topping part.

 Ready to bake at 350 for 10-12 minutes or until slightly browned.

DONE!
Super fluffy, delicious pancake muffins.
Let cool for just a bit and then serve.

These were delicious right out of the oven and freeze really well, too.
I think it would be handy to make a couple of batches for the freezer so you could just pull out a few at a time for really quick breakfast options.
