Do you ever make a recipe that leaves your family licking their plates??
I have the easiest recipe that my family is obsessed with. It's their favorite meal and everyone enjoys it. Hello, Chicken Fried Rice!
Remember when I told you I saved two bags of leftover rotisserie chicken when we had rotisserie chicken for dinner a few weeks ago? It's perfect for this dish. I chopped up all the chicken into small pieces and frozen it. They I let it thaw in the fridge during the day and whipped up this for an easy meal. It's budget friendly and delicious. Win-win!
Ingredients:
2 cups rotisserie chicken
1 cup diced carrots
1/2 cup diced onion
bacon grease
salt and pepper to taste
Soy sauce to taste
Yum Yum sauce to taste
2 bags of cooked boil in the bag white rice
2 chopped green onions
1 egg per person plus one extra (I did 6 for my family of 5)
Directions:
Cook your carrots, onions and heat your rotisserie chicken in a skillet with a little bacon grease. Add in some soy sauce to taste. Cook until the onions are clear and the carrots are softened.
Boil white rice in bags and drain. Add in the cooked white rice. And a generous pour of Yum Yum sauce and soy sauce and stir.
Cook scrambled eggs until they're browned and chop them up small.
Combine the eggs into the rice mix and top with green onions. Serve!
This is delicious right away and it reheats so well. My family fights over the left overs.
