Taco Zucchini Boats

Hope you had a wonderful Labor Day weekend.  Ours was relaxing and fun.  I took a nap on Saturday and it was amazing.  Every nap so hard that you wake up completely confused about the day and time??  It was awesome!  Notre Dame won.  We went apple picking and go to swim one last time for the season.  I'm ready for Fall.  Bring on the pumpkins, the cooler temps, plaids and mums.  It's time :) 
Now let's switch gears to talk about a delicious new recipe!!

I think I have a favorite new food and it might surprise you...

ZUCCHINI BOATS!!


I am a fan of zucchini.  Especially this time of year when it seems to be plentiful in the stores.  Remember last week when I picked up a three pack of zucchini from Aldi for under $2??  I have always enjoyed sauteed zucchini, zoodles or grated zucchini in baked goods so I figured I'd give zucchini boats a try.  I found a ton of recipes on Pinterest and then opted to make up my own.

I had leftovers from taco night and wanted to give Taco Zucchini Boats a try.

They were AMAZING!!

I can't wait to make them again and experiment with other flavors.  I made them for lunch and enjoyed them so much.  I'm not sure what my hubby will think of them, but it's definitely something I'll make again and again for myself.  They reheat pretty well the next day.  The zucchini flavor seemed to be stronger the next day, but I still enjoyed them.

Ingredients for 4 boats:
2 zucchinis (washed, sliced in half and scooped out)
1 c taco meat
1/2 c sauteed veggies
1/4 c salsa
1/2 c favorite cheese (I used pepper jack & extra sharp cheddar)
toppings: shredded lettuce, sour cream and salsa

Bake at 375 for 30-40 minutes until cheese is browned and zucchini has baked through.  Let cool and serve with your favorite toppings.







My mouth is watering just looking at these pictures.  I cannot believe how good they were.  These ingredients are all on my grocery list for this week because I'm making this recipe again ASAP.
