We are HUGE fans of Black Beans! They are so yummy and I've found so many good recipes that include them. My family enjoys them and it seems like our mexican meals are a little more filling when black beans are in the recipe. I promised you my Black Bean Quesadilla recipe a couple of weeks ago so I'm thrilled to share it with you today... along with my other top 5 favorite black bean recipes.

BLACK BEAN QUESADILLAS
Ingredients
black beans (drained & salted)
your favorite salsa
sharp cheddar cheese
tortilla shells
+ all the fixings (sour cream, more salsa & guac)
Load everything onto your tortilla shells and toast each side.
Super easy and Super yummy!!

ReplyDeleteWhat great recipes! I'm gonna to try the salsa recipe this week! We had black bean quesadillas last night :-) I tried to copy some we had at a restaurant recently. I sautéed peppers and onions, until they were cooked and then added the black beans to warm them up. I put that mixture as well as Monterey Jack cheese in the quesadilla and and then grilled it. Yum! I always love to try the recipes… Thanks for sharing!
ReplyDeleteWe ate a lot of black beans, too! James isn't as big a fan as I am but he has learned that I am going to make them part of our meals so he better just get used to them.

ReplyDeleteCan I admit that I've never cooked with black beans?! I don't dislike them, but I didn't grow up eating them so I think it's just not something I even ever think about buying! But these recipes look DELICIOUS! I am definitely going to need to stock up on them and try some of these!

I make homemade black refried beans in the crockpot and they are SO good!! Love these different ideas for using black beans in different recipes! Definitely thinking I am going to be making that fresh black bean avocado salad- that looks SO yummy!!
ReplyDeleteAbsolutely genius and I can't believe I haven't ever thought of doing that before. Totally subbing out chicken for black beans next time. It will cook SO much faster!!!
