Happy BIRTHday Eleanor!

My newest niece made a surprise entrance today!
Welcome
Eleanor Rose
She's such a pretty baby with a head FULL of hair.
Luckily she didn't take after her Aunt Whitney because I was bald until age 3!!

I'm so glad to have my iPhone
because I got to FaceTime into her hospital room to meet her today!
Thanks Sis for making that happen!
I'm a little partial but she really is adorable :)

The Proud Big Sis: Addison
"Want to meet my little sister?"
is what she asked me when I got to talk to her.
Congratulations Tyler (Little Bro) and Tabitha.
Everyone is smitten :)
Can't wait to meet her soon!!

Rachel Ray Inspired Tacos

My husband and I love to eat Mexican food.
I found Rachel Ray's recipe for
and made a few changes.

Here's my version of RR's recipe for 2-4 people:

1 1/2 lb ground round
handful of jalapeno peppers
4 cloves of garlic peeled
1 medium size yellow onion
1 t cumin
coarse salt and pepper
1 T Lawry's season salt

diced tomatoes
chopped lettuce
re-fried beans
shredded cheese
salsa/taco sauce
extra jalapenos
Tostitos

Brown ground beef
chop up meat with handy dandy meat chopper for Pampered Chef
Cut onion into smaller pieces, peel garlic and grab a handful of jalapenos.
 Add dry ingredients into meat.
Put onions, garlic & peppers into food processor
Puree
Add mix to almost browned ground beef
Let cook together for 8-10 minutes to blend flavors.
 Heat refried beans.
Plate it up and dip chips in it.
You could easily eat this with soft taco shells, hard shells or chips.
It's our very favorite taco meat recipe.

Birthday Wrap Up

We had a lot of fun celebrating Kevin's birthday.
*I found these napkins, plates and tablecloth on clearance
for $1 each at Wal-Mart a few weeks ago!
I loved the bright colors.

Take a peek at what we did.
Horseshoes with friends.
His birthday wouldn't be complete without his grandma's buttermilk cake.
Good thing I learned how to make this cake from scratch!
 Wonder what he wished for??

We also got his and hers Starbucks.
*I'd highly recommend the tall Mocha Light Frappuccino for 120 calories.
I worked in his office while he taught.
Then we went to the new City Creek mall and had dinner at
Texas de Brazil
Yummy and good thing it was half off because it's pricey!

WILDFIRES this week.
The mountain is on fire
and there are fireworks going up all over the valley below.
Let's be careful people and not start any more fires!

Eat Well Everyday

Here are some healthy eats from my last few weeks:
Omelets
 Lemon Pepper Tilapia for dinner
Going to a cookout and have to bring something?
Why not bring a veggie tray?
Berry salad with and without chicken

 Brown bread
everyone at my house loves this bread :)

 Delish granola/berry/yogurt combo
Hoping to make my plates as colorful as possible this summer.

Need help packing for a trip?

I travel on a regular basis.
Since I like to work smarter and not harder,
this is how I make my life easier:
Two lists that I've saved as Word documents on my computer.
Before Traveling...
is a list of things that I need to take care of around the house before heading out of town.
Traveling Must Haves...
is my personal list of things to pack for a trip.
These 2 lists make my life easier.
I just print them off when my trip is coming up
and don't have to write out the same lists over and over again.
I cross things off as I get them done
and I can travel worry free knowing that things are all taken care of.
Go ahead and make a set for yourself!
You won't regret it.
