Key Lime Pie

I recently purchased some key limes
and I realized this week that I hadn't used them yet.
Luckily, my good friend Martha e-mailed me a recipe for

I wanted to make a pie so I made a few adjustments to the recipe.

You'll need 1 1/2 c finely ground graham cracker crumbs
1/3 c sugar
5 T unsalted butter, melted
3 large egg yolks
2/3 c fresh key lime juice -
the recipe says that's approx. 23 key limes
1 can sweetened condensed milk (14oz)
1/4 c heavy cream
2 key limes for garnishing

*Martha calls for lime zest but I didn't' really care for it

Mix graham cracker crumbs, sugar & melted butter
Press into a greased pan of your choice.
I was eager to use my vintage hexagon plate for this recipe!
Smush the bottom of the pie crust first and do the edges second.
*Smush is a very technical term for this process :)
Once crust is in place, bake at 350 for 10 minutes.

Let me tell you a few things that I learned about key limes:
They are full of seeds
They have tough skin
They don't have that much juice in them so you have to squeeze A LOT of them.
A strainer is a must when juicing them.
I squeezed my entire bag of key limes but didn't have enough lime juice.
I supplemented with some store bought key lime juice.

Whisk egg yolks for about 5 minutes until very thick.
Add in a steady stream of milk and continue mixing until it thickens again.
Repeat with lime juice.

Pour filling into baked crust that has completely cooled.
Bake for 10-12 minutes or until set.
*I initially forgot this step, was eager to be done with the pie
and stuck it in the fridge.
About 15 minutes later I realized that I was supposed to BAKE it!
So I quickly stuck it in the oven.  No harm... right??
Let chill in fridge for at least 4 hours before serving.
 Great texture.
I served with whipped cream and berries.
I ran out of key limes so I didn't have any to garnish my pie with.

Whitney's tips:
The pie was very tart, next time I will cut the lime juice to 1/3 c.
Give Martha's bars a try for next time.

Destin: Part 2

We had a lot of delicious meals while we were in Destin.
Here were our favorites in no particular order.

La Rumba
A delicious Mexican grill & cantina
 This was a new restaurant for us this year;
we loved it so much that we had dinner there twice.

The Donut Hole
no trip to Destin would be complete without a stop here
We ate donuts all week long!
My #1 fave is the powdered sugar "Angels" with chocolate filling.

McGuire's Irish Pub
Their food is tasty and we always contribute to their walls of money.
You decorate a dollar bill with your name, year, or anything else you want to include
and then you staple it to the wall.
They boast of having over $1 million hanging up around their pub.

Another new place, Johny O'Quigley's Ale House
 A perfect spot for lunch!

It's only fitting that the Jordans eat at Jordano's Pizza
Their restaurant is small so we always take it to go.

Dewey Destin's Harborside Restaurant
(It's right next to the harbor so plan on going for a walk after dinner)
We had to wait for an hour for a table
but they have a wonderful.seating area under the trees to wait.
We got to eat out on the patio.
Pretty great view while you eat dinner.
Their jalapeno hush puppies are delish!
Please, please save room for their key lime pie!
Best.crust.ever.

 Kilwins
has amazing ice cream, waffle cones, chocolates and fudge.
*It's also nice to be slightly famoose!!
We got our picture taken with Mr. Moose last year
and our picture happens to be hanging in the restaurant today!!
See us right under the e in moose??
We got fudge and chocolate galore!

 Stinky's Fish Camp
Another new restaurant for us.

We waited for about an hour for a table but they have a darling
store next door that serves drinks and has a gift shop.
The staff is really friendly and the time passes quickly.

They don't have a huge menu but their food seems really fresh.
I had crab cakes that were tasty
and I especially loved the stir fry veggies that came with them.
Our waitress highly recommended the key lime pie.
Southern Living had just tried 70 different pies and named this one the best.
I'd never had key lime pie with fresh berries but it was a.m.a.z.i.n.g.
Kind of cheesecakey, great crust, raspberry drizzle and homemade whipped cream.
Our waitress said that the chef shares his recipe so I wrote him a letter requesting it!!
You MUST give this a try.

I'm hungry after reliving all of the yummy food we ate!
If you ever find yourself in Destin, Florida
give some of these places a try.

Destin: Part 1

Every year we head to the beach with my in-laws.
This year (and the 2 years prior) we've gone to Destin, FL.
They drive down and we fly down.

We dodged tropical storm Debbie and only had 1 rainy day :)
The beaches are so lovely.

We went for a walk on the boat docks after dinner one night.

We had fun watching these very large birds hanging out on the boats.
