Easy Vegetable Soup

Thank you SO MUCH for all of your kind words and encouragement on my post about losing 50lbs yesterday!  I smiled all day long reading your emails, texts and messages across social media.

You guys are the best!

I'm excited to share my recipe for Vegetable Soup with you today.  It's been so cold that soup has just sounded good.  I really love making a big batch of something that makes perfect lunches and dinners throughout the week.  My son loved the soup and my daughter did not.  She prefers crunchy veggies.

This soup is delicious, makes a huge pot of soup and is great reheated all week for lunches.  It comes together really quickly and it is so colorful.  We just love eating it with cornbread or grilled cheese. It gets a little thicker over time so it ends up being very stew like for leftovers.


Whitney's Vegetable Soup:

1 46oz V8
1 1/2 c water
1 can sweet peas
2 cans green beans
1 can sweet corn
1 can petite diced tomatoes
1 can diced potatoes
1 c chopped carrots
1/2 c chopped green pepper
1/2 c chopped onions (I did yellow & purple)
1 pkg 15 oz Hormel Slow Simmered Beef Roast Au Jus
1/2 c uncooked quick cook barley
salt and pepper to taste
1 t season salt
1 t Worcheshire sauce

Open cans, drain off liquid and dump everything into a soup pot.  Heat the Beef Roast in the microwave, shred meat and remove any fatty pieces and then dump meat & Au Jus sauce into the soup pot.  Bring to a boil.  Let simmer for one hour.  Serve.

  2. That sounds really good and so easy! Where do I find the hormel roast? Is it in the regular meat section, or near the packaged deli meat?

  4. Comfort food at its finest! This looks SO good and so simple Whitney. I need to be making more soup in the coming weeks than I have been. We've just been lucky to eat for a while :P.

  5. I have been wildly in love with soup for a few months now! So easy and good, healthy, and one "dish" that serves several meals? Yes please! (and my freezer stash is looking great!) We do lots of bean soups- chilis (traditional, white bean chicken, turkey taco, sweet potato/black bean), and then I've tried some new ones lately we've been loving- tuscan chicken soup, chick pea and sweet potato stew, spicy thai chicken coconut, and this week - curried carrot and coconut (this one didn't go nearly as far as the others but was really good and I'll double next time)!

  6. Give me all the soup. Especially when it's -7 with the windchill. Soup is what makes this time of year bearable.
