I have never been to The Kentucky Derby, but I'd like to go someday. I love the big hats, dressing up to watch horse racing and the actual race. The yummy food is always a fun tradition. I try to make a Derby Pie every year and sometimes we even try a fun cocktail. The big race is this coming Saturday, May 5th.

Derby Pie.
This week I'll be making a Derby Pie. It's like a chocolate chip cookie pie with pecans. I usually serve it warm with vanilla bean ice cream. It's amazing. You can find my recipe here.

You can make full size cupcakes or mini cupcakes. They're both delicious! I made these last weekend to take to girl's night and Fletcher climbed on the counter and ate THREE of them while I was getting ready. I think that means he approves!?!
My recipe makes 28 mini cupcakes or 12 full size cupcakes. I always make homemade buttercream frosting and pipe the frosting on with a Wilton 2D icing tip. It looks so fancy!
