July Recipe Round Up

I'm excited to share my favorite meals from July with you.  I cooked a lot so there are several good recipes to cover.  I tried hard to eat lots of salads, we grilled chicken for dinner regularly and our meals were really colorful.  Hope you find at least one new recipe you'd like to try!

What have you been cooking this month??

1. Grilled Chicken Kale Quinoa bowls
Thinly sliced grilled chicken
Kale Quinoa Mix from Aldi
Feta cheese

This made the easiest lunch several times this month.  I just microwave about 1/3 of the bag of quinoa mix and top with chicken/feta.  It's so good and so filling.


2. Paninis
Sour Dough bread
spicy mustard
ham
sharp cheddar
veggies
Sweet Potato Chips // Veggie Straws

3. Salads
TONS of veggies, hard boiled eggs and grilled chicken on mixed greens.  Honey Mustard, Balsamic and Raspberry Vinaigrette were my go to dressing this month.




4. Fun Kid Food
My kids love fun lunches so I try to make them a couple a week.  Here were two of the favorites:



5. Brinner is always a yummy (and cheap!) dinner option.
Blueberry Muffins Pancakes
Eggs, bacon & fruit

6. Loaded Nachos are always a hit with my family.

7. Egg Hash is an easy lunch that we all like
2 eggs per person
sliced ham or turkey sausage
peppers/onions
sharp cheddar cheese
salt & pepper

8. Homemade Oven Fries
I sliced up 4 or 5 small potatoes, rinsed them and then sprinkled all of our favorite seasonings on them.  They were really good!  I used Seasonsed salt, sea salt, Montreal Steak seasoning and pepper.  Then I baked them at 425 for 25-30 minutes until they were browned on the outside and soft on the inside.  They were great with burgers!

  1. Your kid meals like that always leave me smiling friend. Love them. Those nachos look pretty amazing too. We had some leftover pork the other day and I wanted to make nachos with it SO bad. We had tacos instead. Close I suppose.

  2. I haven't made us nachos in a while but I may have to put that on my meal plan for next week since I've already made this week's. And your egg hash looks so good! I've never heard of it before, but I would love to eat it!

  3. These all look delicious...your food always looks so fresh and appealing! I want to try that loaded nacho plate. I am dieting right now, but think it would be ok to just have a few tortilla chips with lots of lettuce and toppings. Have a wonderful week!

  6. Would you believe it...I just looked at that kale and quinoa mix at Aldi tonight, wondering if it was worth a try! I had quinoa for the first time this month at Panera and loved it, but I haven't made it myself. I will definitely pick up a package of that blend the next time I'm in Aldi! Thanks for the tip!

  8. You seriously make so many yummy meals!! Your salads look amazing and your fun kid lunches are AWESOME. It's almost 11 pm and I just want to jump through the computer screen and dive into those nachos you made- YUMMO!! :)

  9. Oven fries are something that's been on my "things to get right" list for a long time! And I love the idea of loaded nachos as a regular dinner item instead of just for special occasions/events. Delicious!
