Serving Others

It feels like the perfect time of year to talk about serving others and thinking of other people.  There's lots to be thankful for and I know I enjoy my days more when I'm doing things to serve others.  It doesn't have to involve spending tons of money or tons of time either.  I'm happy to share some simple things we've been doing to put a smile on their face.

1. Teachers // Babysitters // Daycare Workers
I challenge you to do sweet things for the teachers and care takers in your life because the work they do is amazing.  They spend their days surrounded by little people and working so hard.  I try to send in something thoughtful for Olive's teachers once a month.  

I've baked cookies, written thoughtful note, sent in a box of truffles from Aldi for each teacher and sent in these cute Thanksgiving gifts this week.  The tea towels and spatulas are under $2 at Walmart and the scarecrows were under $3 at Meijer.  I think her teachers will love them!  We also wrote notes to go with their gifts telling them something we were thankful for about them.  Olive at first said nothing because she was ready to be done, but after talking about it she came up with several cute things to say for each teacher.




2. Delivering a Favorite Drink
Memorize your spouse's favorite drink order or your BFFs and then surprise them with one.  Last winter my kids were so sick and we'd been stuck in the house for days.  A super sweet friend dropped off my favorite drink and popsicles for the kids on my porch.  She texted and said to open the door for a sweet surprise.  It made my day!


3. Snap a Picture
There are tons of holiday events and gatherings going on this time of year.  If you are at an event snap a picture for a mom who can't be there.  Text it to them and tell them their child is having a blast.  A cute friend sent me this picture of Olive from a Halloween party that I couldn't attend.  It made me feel so happy to know she was having a blast and wasn't phased that I was stuck at an appointment.

4. Rake Leaves for Neighbors
My neighborhood has so many trees and a mix of older and younger neighbors.  The yard work is a lot to keep up with so it's nice to help out neighbors that need it.  I saw one neighbor send her lawn crew over to do the leaves of an elderly neighbor.  I know it made their day!  Plus, if you have teenagers this would be such a great way to involve the whole family.

5. Give Grace
Go out of your way to be kind to others this holiday season.  I took Olive to her favorite Duplo class last week.  Fletcher was being a handful - teething, loud, not wanting to sit and mostly wanting to knock down all the Duplos.  The sweet teacher that we know well went above and beyond to be kind to us that day.  She played with him while I built with Olive, she smiled when he was knocking over Duplo towers and then she got him a popsicle when he'd had enough.  She didn't have to do any of that, but I'm so glad she did.  It really helped me out and I appreciated the grace she showed me.

6. Donations
So many places are accepting donations of warm clothes, coats, socks, meals, etc. this time of year.  A local place published a list of Thanksgiving items to donate so we went to the store to purchase one of each item on their list.  I explained to Olive that some people need extra help around the holidays and this was one, small way that we could help brighten their day.  She was thrilled to hunt for the items in the store and was happy to give.

Sweet Potato Cinnamon Bread

My husband will come home from time to time with a new recipe for me to make.  He'll print off the recipe and stop at the store to get the ingredients we need.  He likes to surprise me and I like making things that he is excited about.

He came up with this recipe for Sweet Potato Cinnamon Bread and I have to confess...

I was not excited about it.

I love breads.  I love Fall baking.  But, this just didn't sound great.

I decided I would just put on a smile and make it anyways.

He was so excited and I was happy to do it for him.

We baked it together after the kids went to bed and it was really easy.

And to my surprise, IT WAS DELICIOUS!!

It made the prettiest load of bread that would be perfect for any Thanksgiving gathering this month.  I will definitely be adding this recipe to my recipe box of favorites.


Sweet Potato Cinnamon Bread (original recipe from Taste of Home)

Here's my version of the recipe:

1 3/4  c flour
1 1/3 c sugar
1 t baking soda
1/2 t salt
1/4 t baking powder
1 1/2 t cinnamon
2 eggs
1 c mashed sweet potatoes from a can
1/3 c canola oil
1/3 c whole milk
1/2 coarsely chopped walnuts

Combine wet ingredients and dry ingredients separately.  Stir them together.  Pour into a greased large loaf pan.  Sprinkle the chopped walnuts on top.

Bake at 350 for 35-45 minutes until a toothpick comes out of the center clean.  Cool in the pan for 15 minutes and then remove.  Slices beautifully!



You can even add a sprinkle of powdered sugar for a little extra sweetness.

Halloween at Home

I love decorating, baking and planning events for the holidays.  I really enjoy crafting with my kids and having our home look really festive for the current season.  We got the house decorated and had time to do a couple of cute projects this month.  I'm excited to share them with you early in the month so that you've got plenty of time to make them with your kids if you want.

Directions & Tips
I pulled all of our Halloween colored paint, paint brushes and canvas for this project.  I also had an abundance of wet wipes available.  I let my 4 year old paint the background with the instructions to completely cover up the white canvas.

I've found that if I give her all the colors at once she mixes everything and we end up with a murky brown painting.  However, if I give her one color at a time changing up the brushes she uses then the end result is much more colorful.  I helped her a little, but she did the majority of it on her own.  We let it dry and then added the ghost footprints.

I layered one heavy coat of white paint on her foot, stamped it and then touched up any areas that didn't stamp bright white.  Wet wiped her foot and then moved onto my son.  After the foot prints dried I added the ghost faces.  I always write the year and the kid's ages on the back of our art work.

I snapped some pictures around the house this weekend of our Halloween decor.  We focus on fun, sweet and silly Halloween decorations.  You won't find anything really scary or spooky at our house.

I did my own fun painting project this past weekend - a giant candy corn for our front door.  It was a easy project that definitely adds some cheer to our porch.


My Pottery Barn Kids plates are some of my favorite Halloween decorations.  They're just so cute.  My kids love eating off of them all month long.  I add in some fun Halloween dish towels into the rotation and it makes the kitchen feel festive.  These plates are from 2015 and 2016.  They come out with four new ones every year.  I didn't love the 2017 plates so I didn't add any new ones to our collection this year.  That's my new shopping rule - don't buy it unless you LOVE it.

The top of the fridge is a great spot to put breakable decorations so that your kids can't get to them.

Olive spotted these pink and purple velvet pumpkins at Target last week and had to have them.  They look really cute in her room.

I try to have kid friendly decorations that can't be broken where the kids can reach them.  They play with dancing Snoopy all day long and practice trick or treating with their pumpkins.

This basket is always in our family room and I change out the books monthly for the holidays.  The kids know all of these books stay here and we read through them almost daily.

Pumpkin Coffee Cake

I'm sure most of you have PUMPKIN on the brain now that October is finally here.  Even if you don't eat pumpkin, I'm guessing you decorate with pumpkins or drink something pumpkin.  I have a really delicious recipe for you today.  Pumpkin Coffee Cake!  I needed to come up with a dessert QUICK one evening and I just grabbed things from my pantry.  Voila to this yummy dessert.

It was really easy to put together and it smells amazing.  My whole family loved it!  It's a really pretty cake and would travel well if you need a dessert to bring to a gathering this Fall.


Pumpkin Coffee Cake

Cake:
1 box yellow cake mix
3 eggs
1/2 c water
1/2 c oil
1 T brown sugar
1 T cinnamon
1 c pumpkin puree

Topping:
1 T Cinnamon
1 T sugar
4 T cold butter
1/2 c brown sugar
1 T flour
1/4 c chopped pecans

Icing:
1 c powdered sugar
sprinkle of cinnamon
1 t milk
1/4 t vanilla

Combine all dry ingredients.  Add in wet ingredient and mix until smooth.

Combine all topping ingredients.  Preheat oven to 350.  Pour batter into a greased 9x13 pan.  Sprinkle all toppings on top of cake.  Bake 25-28 minutes or until the middle of the cake is set.  Let cake cool for 15 minutes and then drizzle the icing on top. 

This cake is delicious warm or the next day. 

Straight out of the oven:

Diagonal drizzle of icing once the cake had cooled a bit.

Zucchini Brownies & Fall Recipes

We are lucky to have friends who garden and SHARE!

Maybe some day I'll have some beautiful raised garden beds with veggies to share, but that'll be a few years down the road.

For now, we are thankful for their zucchini!

I grated it all up and froze it so I can just pull out a bag when we need it.

I found the best recipe for Zucchini Brownies and they were so good.  My whole family loved them.

Homemade brownies aren't usually my thing, so you know these must have been delicious for me to share the brownie recipe.  It was really easy, too.

Original recipe here at Two Peas and Their Pod

1 1/2 c sugar
1/2 c vegetable oil
2 c flour
1/4 c cocoa
2 c shredded zucchini (don't drain off all the moisture)
2 t vanilla
1 t salt
1 1/2 t baking soda
1 c chocolate chips
powdered sugar to sprinkle on top

Combine sugar, oil and flour until it looks crumbly.

Add in everything else until the mix is well combined.

Save the chocolate chips for last and fold them into the wet mix. 

Pour brownies into a greased 9x13 pan and bake at 350 for 25-35 minutes.  Insert toothpick making sure it comes out clean when brownies are done.  Let cool.  Sprinkle powdered sugar on top.  Delicious for a couple of days!


They were soft, chewy and fluffy.  You really can't even see the zucchini in them :)

I'm also looking forward to doing some Fall baking this month.

Best Banana Pudding

Hey Friends,

I have the BEST Banana Pudding recipe to share with you today.

This is one of my favorite desserts and I found a way to lighten the recipe up a bit without losing any of the delicious flavor.  It was so good and the friends we served it to loved it.  My recipe doesn't have any cream cheese or sweetened condensed milk in it.  Just pudding and cool whip!  It was delicious :)

It was really easy to make and would be perfect for any gathering any time of year.

Best Banana Pudding

2 large boxes of instant Banana Pudding
Skim milk for each box (6 cups)
1 tub of cool whip
1 box mini vanilla wafers
4 ripe bananas
powdered sugar to sprinkle on top

Make the jello and refrigerate until it sets up.

Once it sets up you can assemble your Banana pudding.

I love the look of trifle bowl desserts so I layered my pudding in that.

Build your layers like this:
wafers
bananas
dollops of pudding
dollops of cool whip

Keep layering until you run out of ingredients.

Refrigerate at least an hour before serving cold.

SO GOOD and SO EASY!!
