Blender Muffins

I mentioned last weekend on Instagram that I was trying a new recipe for blender muffins.  They sounded tasty, I had all of the ingredients and there was no flour or granulated sugar in them.  Win-win-win :)

The original recipe can be found here
and I made some changes to improve them!

My recipe:
3 ripe bananas
3/4 c your favorite peanut butter
2 eggs
1 t baking soda
1 t vanilla
sprinkle of salt
1 generous squeeze of honey
1/2 c chocolate chips

Put everything in the blender except for the chocolate chips and blend until smooth.

Scoop into mini muffin tins and bake at 350 for 8-10 minutes.

I saved a few chocolate chips to add on top of the muffins.

My baking assistant was very helpful this morning.  She loves kitchen utensils and bowls so I usually make her a little station to do some cooking of her own.

These were best fresh out of the oven and got a little chewy leftover.
Olive and I both loved them and they are much healthier than our usual muffin recipes.

What do you make for your littles for breakfast??

My bloggy friend Kelley has done a whole series on super quick AND healthy breakfast options for toddlers.  Check out her breakfast ideas here - I am anxious to try the microwave eggs, muffins and baked banana pancakes she's shared.  She even sneaks veggies into breakfast and makes it look delicious.

I Can't Live Without... the HOLIDAYS!!

I can't live without the HOLIDAYS!!  I grew up in a house where we celebrated and decorated for nearly every holiday.  The house was always so festive and we ate holiday treats.  I knew I wanted to continue that tradition with my own family one day.

Easter is the next holiday and I have been having so much fun getting ready for it.  We decorated our house for Easter yesterday.  Sure, it's easier to do the decorating during nap time or late in the evenings, but Olive loved helping me decorate.  She counted the eggs and pointed out all of the bunnies.  She was so excited.

I have almost finished shopping for Olive's toddler Easter basket.
I picked up everything at The Dollar Tree, Amazon, Target or TJ Maxx.
I didn't spend a lot, but made sure to pick out things that she'll love.
That's the most important part - right???

I also make sure to toddler proof and kitty proof my decorations.  That means that breakable things are up on shelves and out of reach and there are fun non-breakable decorations that Olive knows she can play with.  Currently, she's got an Easter basket full of rubber duckies, eggs and Easter M&M people that she knows is hers.  The cats try to chew on any plants and artificial flowers.  So those are up on the mantle and up high which keeps them from eating non-food items.  Works well for everyone.

I don't have a ton of decorations for each holiday, but I've got a solid collection.  I stock up on clearance decorations after the season and rarely pay full price for decor.  I always put a seasonal wreath on our door and holiday decorations inside.  We also make several different holiday treats throughout the season and share with friends.  I've got some fun Easter crafts and art projects planned for the near future.

We have a great time with every holiday!!

Do you decorate for the holidays??

Favorite March Dinners

We've eaten out more than usual this month with traveling and having out of town guests.  I always look forward to returning to our regular cooking/grocery shopping routines.  We've been trying to eat healthier meals, more salads and exercise more.  So far, so good with those goals.  I think the Spring weather has really helped us to get out and about more.  I wanted to share some of the best dinners we've had this month with you.

// 1 //
The Nacho Bar
was clearly the favorite dinner of the month.
We had great nachos for lunch when we were in Oxford, MS and I just had to try to recreate them at home.  They were delicious and everyone loved them!!
Our nacho bar included: grilled chicken, salsa, chips, chopped lettuce, black olives, chopped sweet peppers, shredded sharp cheddar, jalapenos, cherry tomatoes, black beans, refried beans, spanish rice and sour cream.

Our St. Patrick's Day Feast
brown bread, pot roast and rainbow jello

// 3 //
LOTS of salads
we've found that variety and always having fresh produce in the fridge is key
to making sure you eat colorful meals.

Taco Salads
ground turkey tacos with all the fixins

My favorite dessert of the month was Butterfinger Cookies

WIWW

I have been wearing and rewearing some of my favorite outfits all month.  I find myself grabbing the same staple items and mixing up my accessories.  New earrings, statement necklace or scarf and shoes can really change up the look of things.  I'm going to need to start the great seasonal closet switch ASAP because it's starting to get warmer in Mississippi.  I always dread doing it, but love having new options to wear?  Anyone else dread the big closet season switch like me??

My favorite looks of the week:

1. Going to Church
dress - JCP
cardigan - GAP
necklace - Groop Dealz
Flats - TJ Maxx
Olive's dress was a gift, shoes from Target & bow from Julia's Bowtique

2. I love my chambray!!!
I've been wearing my chambray shirts on repeat for weeks.  I currently own 3 or 4 and they are my favorite.  They match everything and are definitely a go to item in my closet.  See what I mean??

3. Polka-Dots on Polka-Dots
top, cardigan & pants - Old Navy
necklace - Groop Dealz
Olive's outfit came from TJ Maxx, bow from Wal-Mart and shoes from Target

 4. My floral top has also been on repeat all month long.
It's the perfect weight for Spring.

Thanks for stopping by my blog!!

The Best of Savannah

I thought I'd share our favorites from Savannah with you:

Best chocolates:
Savannah's Chocolate Company
They had TONS of different chocolates and candies.  They make homemade pralines and give out samples to all of their visitors.  The shop smells like heaven and their chocolates are so tasty.

Best patio dining:
Olive enjoyed some alfresca dining at the
Cafe at City Market
Their salad was tasty and they serve several desserts
We enjoyed listening to the live music from the City Market while we ate our dinner on the patio.

Best nicer restaurant:
The Olde Pink House
You must make reservations, it's a little pricey and it is usually easier to get in for lunch than dinner.

Great pizza:
Kevin found a groupon for West Wing Pizza Company
it was perfect for a good, quick dinner

Great Frozen Yogurt:
A cute little shop on Broughton Street

Great hotel:
We saved up some credit card rewards to use for our hotel stay so our hotel was nearly free which is always great for traveling!
Best Western downtown
the rooms were cute, clean and really comfy beds
it was the perfect set up for a pack-n-play and everyone slept well
they offer free breakfast
and are walking distance to anything you'd want to do

I always hope I'll run into Paula Deen while I'm in Savannah, but I've never gotten to eat at her restaurant.  Maybe one day...
