Word of the Year: CHANGE

I've seen a few bloggers coming up with a word of the year
so I was inspired to do my own.

CHANGE
is my word of 2013 
because I can already tell that this year will be full of it.  
Mostly all good change 
but I like routine, like schedules, like familiarity 
so this idea of change is a bit frightening and exciting.  

I'm expecting changes at home with a new baby and motherhood in general.  I'm expecting work changes in my transition to life as a working mom and hubby has work changes headed his way. We live in a smallish place now so there will have to be some changes with major rearranging/reworking the place or a potential move for more space.  I'm sure that there is even more change out there that I have yet to even wrap my head around but I'm trusting God to take good care of us as he always has in 2013.

Homemade Pizza

I mentioned last week that I've been on a recipe trying kick.
This is the original recipe that I tweeked a bit.

Here's my latest success...
HOMEMADE PIZZA

My husband and I could eat pizza all the time
so I was excited to try a healthier version than ordering out.
CRUST:
 3/4 c warm water
1 pkg self rising yeast
1 t sugar
2 1/2 c flour
1 t Kosher salt
3 T olive oil

TOPPINGS:
marinara
your favorite toppings

Mix water and yeast.
 Add sugar to proof.
 Let stand for 5 minutes and make sure it's frothy.
If not, start over.
 Mix flour, salt and olive oil.
I used my Kitchen Aid mixer and it was really easy.
 Mix until well combined and then lightly coat with olive oil.
 Cover in a warm place and let rise for 30 minutes or so.
Preheat oven to 400.

 Roll out to desired thickness.
I left a nice crust all around the edge and decided a square pizza was a nice shape.
 Bake for 8 minutes before adding toppings to ensure a fully cooked crust.
 Add your favorite marinara sauce and toppings.
 I always use turkey pepperoni because it's delish and better for you.
 My husband likes more variety in toppings so I chopped some things for him.
Sprinkle with seasoned salt.
Add cheese.

 Bake for 13-15 minutes with the toppings at 400.
Voila... a delicious homemade pizza!
Let cool for a few minutes and then cut.
I was impressed that you could pick up this pizza to eat it!
Most homemade pizzas have a floppy crust so this recipe was super.
My husband asked if we could have it again this week :)

 I also made a mini veggie tray to go with the pizza.

High Five for Friday!

Happy Friday to you!
I could get used to these short work weeks.

 1. We got confirmation that our baby is a GIRL this week
so I made pink girlie cookies for my class to celebrate.

2. I had a four day weekend so I spent a lot of time hanging out at home.
Topher & Oliver = BFFs
 
 3. I've been craving fruit and cereal.

4. I'm loving this spiky accessory trend.
I got this bracelet from GroopDealz
and am on the hunt for a few more to add to my collection.

 5. I tried several new recipes this week.
I did Cinnamon Pull Apart Bread and homemade pizza.
Tune back in in a few days for the recipe for this pizza.
My goal for the coming week is try more new recipes!
