Cafe Rio Pork

There's no such thing as Cafe Rio in Arkansas and that is unfortunate.  I've had to work on making my own version at home so that we can eat some delicious burritos.

Ingredients:
1 3-4lb Pork Roast
1 coke
2 cups brown sugar
2-3 cups chunky salsa

Burrito Fixins:
lettuce
shredded cheese
diced tomatoes
chopped onions
chopped cilantro
chopped green peppers
black beans
Your favorite taco sauce
tortillas
Lime rice 

 Cover pork roast in water and cook in crock pot for 5-6 hours.
Let cool and shred.
The meat will still be warm so it's easiest if you shred it with gloves on and the meat tastes best if you wear cute gloves.  Well, that last part may not be true, but I wouldn't risk it.

Add pork to liquid mixture and cook for another 1-2 hours.


 Make white rice, add juice from 1 lime and some lime zest.
 It looks and smells amazing when it's done cooking.
 Cut up all of the fixins and set them out so your guests can build their own burrito.
 We prefer wheat tortillas at our house.
 The burrito bar is open for business!

 We made burrito bowls and burritos.
Both were equally delish.
 Enjoy a Cafe Rio inspired dinner at your house soon!
The leftovers are amazing too so make plenty.

The Greats

It was fun to take Olive around to meet our extended family while we were in Indiana.  I was excited for her to meet her Great Grandparents.  She's a lucky duck and has 5 great grandparents - 3 grandma's and 2 grandpas, one on my side and 4 on Kevin's side.

Again, we are enjoying being just 7 hours away from family now that we have a baby.

4 Months Old

Olive turns 4 months old today.
We are going to break out the rice cereal and start introducing baby food to celebrate.
I can't wait to see what she likes to eat.
I loved sweet potatoes as a baby 
so much so that I actually turned orange from eating so many!
She's so alert, looking around, making faces, sleeping in her crib, enjoying her paci, chewing on her hands and she found her toes this week.  It's exciting to be 4 months old :)

Heilman for Spencer County Sheriff

 My dad is running for Sheriff of Spencer County Indiana.
This is his third campaign so he's getting pretty good at this stuff.
He ran for Warrick County Sheriff and won two consecutive terms.
He's currently the Chief Deputy in Warrick County
and we plan to help him campaign and win his next election. 

Everyone put on their campaign gear and got ready for the parade.
The temps were in the 90s and we are all smiles before the parade.
My dad's siblings came in town for the parade too.

The grandkids enjoyed campaigning for their Papaw.
Olive got a stroller fan to help keep her cool.

We threw out candy and gave out Heilman cups to voters.

Then we spent the rest of the day at the Dale Fall Fest eating fair food.

Looking forward to some more campaigning 
for the primary in May 2014 and the general election in November 2014.
